Ingredients:

  • 2 chicken breasts (or thighs), diced
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery sticks, chopped
  • 1 potato, peeled and diced
  • 1 litre of chicken stock
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley (optional)

First up, soup is undoubtedly the ultimate winter comfort food – easy to prepare, nourishing, and incredibly warming. Packed with nutritious ingredients, this chicken and vegetable soup can be made in just one pot, making it a perfect go-to meal on those busy days when you need something quick and satisfying.

Instructions:

  1. To begin, heat a large pot over medium heat and add a bit of oil. Sauté the chicken until browned on all sides, then remove and set aside.
  2. Next, in the same pot, sauté the onion, garlic, carrots, celery, and potato for about 5 minutes, or until softened.
  3. Afterward, add the chicken back into the pot along with the chicken stock, thyme, bay leaf, salt, and pepper.
  4. Bring everything to a boil, then reduce to a simmer and cook for 30 minutes, or until the vegetables are tender.
  5. Once done, remove the bay leaf, adjust the seasoning, and garnish with fresh parsley before serving.

2. Classic Cottage Pie

Ingredients:

  • 500g minced beef (or lentils for a vegetarian version)
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 500g potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and pepper, to taste

When it’s cold outside, nothing quite beats the hearty, filling nature of cottage pie. This dish, with tender minced meat (or lentils for a vegetarian version) and a creamy mashed potato topping, is sure to warm you from the inside out.

Instructions:

  1. To start, boil the potatoes in salted water until soft (around 15-20 minutes). Drain and mash with butter and milk, seasoning with salt and pepper. Set aside.
  2. Meanwhile, cook the minced beef in a pan until browned. Add the onion, carrots, and garlic, cooking for another 5 minutes until softened.

3. One-Pan Roasted Root Vegetables

Ingredients:

  • 4 medium potatoes, cut into chunks
  • 2 carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1 red onion, quartered
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp honey (optional)

For an easy side dish that pairs well with almost any meal, these roasted root vegetables are both simple and delicious. With the natural sweetness of root vegetables like carrots and parsnips, this dish is a fantastic way to get more nutritious veggies into your diet.

Instructions:

  1. Preheat your oven to 200°C (180°C fan).
  2. In a large bowl, toss the potatoes, carrots, parsnips, and onion with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
  3. Spread the vegetables out on a baking tray in a single layer.
  4. Roast in the oven for 30-40 minutes, stirring halfway through, until the vegetables are tender and golden brown.
  5. To finish, drizzle with honey for a touch of sweetness (optional), and serve warm as a side dish or with a main meal.

4. Creamy Tomato and Basil Pasta

Ingredients:

  • 200g pasta (penne or spaghetti)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (400g) chopped tomatoes
  • 100ml double cream
  • 1 tsp dried basil (or a handful of fresh basil)
  • Salt and pepper, to taste
  • Grated Parmesan, to serve

Lastly, for a simple yet satisfying meal, creamy tomato and basil pasta is always a great choice. Rich, comforting, and full of flavour, this dish is perfect for a quick and tasty dinner on a cold evening.

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the onion and garlic, sautéing for 3-4 minutes until softened.
  3. Next, stir in the chopped tomatoes, basil, salt, and pepper. Let the sauce simmer for 10 minutes to thicken.
  4. Reduce the heat and stir in the double cream, cooking for a further 2-3 minutes, until the sauce is creamy and heated through.
  5. Toss the cooked pasta into the sauce and stir to coat. Serve with grated Parmesan and fresh basil leaves for an extra burst of flavour.
